True Trinis really like their bellies (stomachs) above everything else. Then, after their belly is full, they roll up like snakes and go to sleep. Some of the best limes (hang-outs) are centered around a good cook. Sometimes, the best cooks are men. Sometimes, the best kitchen is the river bank or waterfall. Caura, Lopinot, Marianne, Shark, Lalaja...so many, so many.
You know...it is hard to know all the different fruits, foods, and wild meats (local animals) that are available as they are so numerous. The people who are from the rural areas have a distinct advantage here. I mean, if you are not of that, you are not of that. If you have never been hunting, caught a 'gouti (agouti-local animal), and made a cook in the bush (forest)...you can't fake it.
So much of local cuisine is all about the experience that merely buying it on the Main Road does not do justice. You have to be a part of the experience to truly appreciate the meal. It's like the difference between actually going to an Indian wedding and someone else going and bringing the food back for you. No...it cannot taste the same.
Location is also part of the taste. Somehow, doubles bought at the side of the road...St. James, George by Brooklyn Bar, Sauce in Curepe, Marabella roundabout...taste plenty better than any store doubles...like in Queens, NY.
